Preserving Vegetables

It’s that time of year that we shift our focus from tending to preserving. What are the ways that you preserve what comes out of your garden? Canning? Freezing? Drying?  There are so many different ways that you keep your veggies good until you are ready to use them. 

Up until this year, we either used what we got right away or I would freeze the items that we could freeze until I was ready to use them. But this year, I got my canner finally! So I have been patiently waiting to use it.

Of course there are still some things that we will freeze (like corn) and dry (like basil), but having the pressure canner brings on a whole new dimension to preserving our veggies. I am so looking forward to having beans and corn during the winter months which is something we have not been able to do until now.
