Harvesting Herbs

Harvesting herbs is probably one of the easiest things to do on a homestead or in your garden. Once the plant has matured enough to start harvesting, I imagine that you will never want to buy your herbs again. And I wouldn’t blame you for that thought.

Once you use fresh herbs, you will not want to buy them again because the flavor is so much better than what you get at the grocery store. The herb is more fresh and therefore more potent as well. Plus there are several ways that you can preserve these herbs to use all winter in your kitchen.

I think my favorite way to preserve herbs is to freeze it. You cut the herbs down to the size you will use for cooking first. So either strips or diced, or however you use them in your cooking. Place the herb into an ice tray in say like 1 tsp or 1 tbsp servings. Pour some olive oil over them and place in the freezer. Once they are frozen, you can take them out of the ice tray and store them in your freezer in either a plastic container or a ziploc bag.

When you need them for cooking you pop one in your pan and you have both your oil to start and your herbs. For me, this is the easiest way to save and use my fresh herbs. Of course you can also dry them and use them that way too. It is another way that is easy to do and makes them handy any time you need them for cooking.
